Vegetable Stir Fry with Tofu

Quick and healthy vegetable stir fry with crispy tofu in a savory sauce.
Ingredients
- 400g firm tofu, pressed and cubed
- 2 tbsp cornstarch
- 3 tbsp vegetable oil
- 1 broccoli head, cut into florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 2 cups snap peas
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tsp sesame oil
- Sesame seeds for garnish
Instructions
- 1Prepare the tofu
Toss tofu cubes with cornstarch. Heat 2 tbsp oil in a large wok or pan over medium-high heat. Fry tofu until crispy on all sides, about 5-7 minutes. Remove and set aside.
- 2Stir-fry vegetables
Add remaining oil to the wok. Add garlic and ginger, stir for 30 seconds. Add broccoli and carrots, stir-fry for 3 minutes. Add bell pepper and snap peas, cook for another 2 minutes.
- 3Make the sauce
In a small bowl, mix soy sauce, rice vinegar, maple syrup, and sesame oil.
- 4Combine
Return tofu to the wok. Pour sauce over everything and toss to coat. Cook for 1-2 minutes until sauce thickens slightly.
- 5Serve
Garnish with sesame seeds and serve over rice or noodles.
