Thai Green Curry with Chicken

Aromatic and spicy Thai green curry with tender chicken pieces and fresh vegetables.

Ingredients

  • 500g chicken breast, sliced
  • 2 tbsp green curry paste
  • 400ml coconut milk
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 cup Thai basil leaves
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 2 kaffir lime leaves
  • 1 tbsp vegetable oil

Instructions

  1. 1Prepare the curry base

    Heat oil in a large pan over medium heat. Add curry paste and cook for 1-2 minutes until fragrant.

  2. 2Add coconut milk

    Pour in coconut milk and bring to a simmer. Add kaffir lime leaves.

  3. 3Cook the chicken

    Add chicken slices and simmer for 10-12 minutes until cooked through.

  4. 4Add vegetables

    Add zucchini and bell pepper. Cook for another 5 minutes until vegetables are tender-crisp.

  5. 5Season and finish

    Stir in fish sauce and palm sugar. Add Thai basil leaves just before serving. Serve with steamed rice.
